Roadside chicken


Possibly the best grilled chicken recipe of all time. Here's my take on it.

Roadside Chicken
1 cup white vinegar
1/2 cup canola oil
1/4 cup Worcestershire sauce
1 tbs kosher salt
1 tbs white sugar
1 tsp garlic powder
1 tsp onion powder
1 tsp finely ground black pepper
1/2 tsp poultry seasoning

Mix all ingredients in a large Mason jar, close lid and shake vigorously. This will keep in the fridge for several weeks to months. Shake well before using.

Preparing the chicken:

Use 8-10 pieces of bone in chicken. Place chicken in a plastic storage bag along with the marinade. Marinate overnight. Prepare your grill for indirect cooking. Remove chicken from the bag and boil the marinade for . Grill chicken directly for 3-5 minutes, turning for even browning. Then place chicken on the indirect side5 minutes. Close the lid and after 15 minutes start basting the chicken every 5 -10 minutes. Chicken is done when it reaches an internal temp of 180 degrees and is pulling away from the bone.
